Pumpkin Curry Soup Recipe

Ingredients:
2 T. butter
1 cup chopped onion
2 large cloves of garlic (finely chopped)
1 1/2 tsp. curry powder
1/2 tsp. salt
1/4 tsp. white pepper
3 cups chicken broth
1 (15oz) can of solid packed pumpkin
1 (12oz) can of evaporated milk
Sour Cream (optional)
Ziploc Bag (optional for piping sour cream)
Directions:
1. Melt butter in a saucepan, then add onion and garlic. Cook for 2-3 minutes.
2. Stir in curry powder, salt and pepper and cook another minute.
3. Add broth and pumpkin. Bring to boil then reduce heat to low and simmer for 15 – 20 minutes, stirring occasionally.
4. Stir in evaporated milk.
5. Transfer to a blender and blend until smooth
6. Serve warm in bread bowls or with bread on the side.
7. For a fun Halloween touch, place sour cream in a small ziploc bag. Cut off a corner tip and pipe 4 concentric circles onto each bowl of soup. Use a toothpick to pull lines from the center to the edge (creating a web effect).
