Christmas Cherry Zucchini Loaf Recipe

Bread Ingredients:
1 1/2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon ground nutmeg
1/2 cup oil
1 cup sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups finely shredded unpeeled zucchini
1/2 cup marachino cherries, chopped
1/2 cup walnuts, chopped
Frosting Ingredients:
3 ounces cream cheese
1 tablespoon butter
1/2 teaspoon vanilla extract
1 1/2 cups powdered sugar
Directions:
For the Bread . . .
1. In a mixing bowl stir together flour, salt, baking soda, baking powder, and nutmeg. Set aside.
2. Beat together oil, sugar, and eggs. Add vanilla.
3. Alternate adding flour mixture and zucchini to butter mixture. Stir well.
4. Place chopped cherries on a paper towel to absorb liquid.
5. Add cherries and nuts into mixture, and pour into a greased loaf pan.
6. Bake at 350 degrees for 50 to 60 minutes.
For the Frosting . . .
1. Mix together cream cheese, butter and vanilla.
2. Gradually add powdered sugar. Spread over cooled loaf.
