Halloween Shepherd’s Pie Recipe

Halloween Shepherd's PieIngredients:

2 lbs potatoes
1/4 cup butter
2 tablespoons milk
1/2 teaspoon salt
3 lbs ground beef, divided
1 red bell pepper, chopped
1/2 onion, chopped
2 cups frozen peas and carrots
1 cup frozen corn
1 teaspoon garlic salt
1/2 cup beef consommé
1 cup cream of potato soup

Directions:

1. Peel and quarter potatoes. Boil in salted water until tender (about 30 minutes).
2. Drain potatoes and add butter. Blend with electric mixer until well combined. Slowly add milk until smooth. Season with salt to taste, and set aside.
3. In a large skillet, cook beef with red pepper and onion until beef is cooked through and vegetables are tender. Drain.
4. Return meat to skillet and add frozen vegetables (reserving a few peas for “eyes” on the ghosts) until warm. Season with garlic salt.
5. Mix together beef consomme and potato soup. Add to meat mixture, and stir until warm.
6. Spread meat mixture into greased 13×9″ baking dish, and top with mashed potatoes shaped into ghosts. Use peas for the “eyes” of the ghosts.
7. Bake uncovered at 350 degrees for 30-35 minutes.
