Heart Pancakes w/ Fresh Strawberry Syrup
Pancakes are my family’s favorite breakfast and shaping them into hearts make them extra special for Valentine’s Day. I also love to serve pancakes with fresh strawberries (frozen work as well) and a delicious homemade syrup. I like that this recipe incorporates the Valentine’s day symbol of the heart, as well as the color of red. Fresh Strawberry Syrup:
1 cup berry juice (100% juice)
2/3 cup sugar
2 t. cornstarch
2 cups fresh strawberries, sliced
Directions:
1. Make your favorite pancakes. There are several ways to form a heart pancake (all pictured below), but I think the easiest is to pour a “V” shape and form the heart shape with a spoon.
2. To make syrup, place juice, sugar and cornstarch in a saucepan. Bring to a rolling boil, stirring often. Remove from heat and allow to cool slightly. Add strawberries and serve over pancakes.

If you prefer your pancakes with butter, another nice presentation is to use a cookie cutter to cut heart shapes out of butter.
