Best Homemade Pancake Recipe
I love pancakes! If fact, I make them for my family almost every Saturday morning. I used a box mix for years until I moved to Europe (where I couldn’t find a good box mix). So, I tried several recipes until I found the perfect one. I am thrilled with this homemade pancake recipe, and I continue to use it now that I am back in the states.
I always make a big batch so that my family has leftovers for a few days. We just pop them in the toaster to warm them up, and they taste great. Enjoy!
Ingredients:
3 cups flour*
2 1/2 tablespoons baking powder
2 teaspoons salt
2 tablespoons sugar
2 1/2 cups milk
2 eggs
6 tablespoons butter , melted
* I have found that a good quality flour makes a difference in the taste of pancakes. I recommend Gold Medal flour or King Arthur flour.
Directions:
1. In a large bowl, mix together the dry ingredients (flour, baking powder, salt and sugar).
2. Add the milk, egg and butter. Whisk together until smooth.
3. Melt butter on a griddle or frying pan over medium heat.
4. Pour about 1/4 cup of batter for each pancake onto griddle.
5. Flip the pancakes when the top begins to bubble; remove when both sides are golden brown.
6. Wipe the griddle or pan between each batch and add new butter (for a yummy buttery taste!).
7. Enjoy!
