Chocolate Mint Brownies

Ingredients:
Brownies:
Brownie mix (and ingredients according to package)
1/2 teaspoon mint extract, optional
Filling:
1 1/2 cups powdered sugar
3 tablespoons butter , melted
1 teaspoon mint extract
2 tablespoons heavy whipping cream
4 drops green food coloring
Chocolate Ganache:
2/3 cup heavy whipping cream
1 cup semisweet chocolate chips
Directions:
1. Make brownies according to package directions adding extract (if desired) before baking.
2. Mix filling ingredients together and spread over cooled brownies.
3. For ganache, heat cream to a low boil. Remove from heat and pour over chocolate chips. Stir until melted and smooth. Cool slightly before pouring over filling.
