Mint Chip Muffins

Ingredients:
2 cups flour
1/3 cup brown sugar
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup milk
1/2 cup butter, melted and cooled
2 eggs
1 teaspoon vanilla extract
1 teaspoon mint extract
1 teaspoon green food coloring
1 package mini chocolate chips
Directions:
1. Heat oven to 400 degrees, and grease muffin cups.
2. Stir together flour, sugars, baking powder and salt. Set aside.
3. With an electric mixer, blend milk, butter, eggs, extracts, and food coloring.
4. Gradually add dry ingredients.
5. Stir in chocolate chips.
6. Spoon into muffin cups and bake for approximately 15 minutes, or until a knife inserted in the center comes out clean.
