Patriotic Potato Salad Recipe
This is a great addition to a July 4th picnic. The red, white, and blue potatoes make it especially patriotic!
Ingredients:
2 lbs. potatoes (baby red, yellow, and blue)*
1 cup mayonnaise
2 T. vinegar
1 1/2 t. salt
1 t. sugar
1/4 t. pepper
1/2 cup chopped onion (optional)
2 hard-boiled eggs, chopped (optional)
*I have seen these at most major grocery stores (as well as COSTCO and Trader Joe’s). Make sure to ask if you can’t find them — sometimes they are in the specialty section.
Directions:
- Cut potatoes into halves or quarters. Cover with water in a large pot.
- Bring the potatoes to a boil over medium-high heat.
- Reduce the heat to low and simmer until potatoes are tender, about 10 minutes. Drain and cool slightly.
- Combine mayonnaise, vinegar, salt, sugar and pepper in large bowl. Add potatoes, onion and eggs and toss gently.
- Chill until ready to serve.
