Pistachio Pineapple Salad
The below recipe incorporates the St. Patrick’s Day color green. It is also called “Watergate Salad” (see Food Timeline.org to find out how it got it’s name), and can easily work as a dessert, because it is so sweet! Ingredients:
1 (3.4 oz.) package instant pistachio pudding mix
1 (20 oz.) can crushed pineapple, undrained
1 (16 oz.) container cool whip
1 cup mini marshmallows (optional)
1/2 cup pecans, chopped (optional)
Directions:
1. Allow cool whip to thaw overnight in refrigerator.
2. Mix together all ingredients and serve.
