Shamrock Potatoes

The below recipe incorporates the St. Patrick’s Day symbol of the shamrock, as well as the popular Irish staple — the potatoe. It cooks up a yummy side dish. Visit our St. Patrick’s Day Symbols page to learn more about the symbolism and meaning of shamrocks for St. Patrick’s Day.

Shamrock Fried PotatoesIngredients:

6 large potatoes (about 2 pounds)
1/4 cup olive oil
1 1/2 t. salt
1/4 t. pepper
1/2 t. paprika (optional)
Shamrock cookie cutter

Directions:

1. Preheat oven to 400 degrees.

2. Line a baking sheet with aluminum foil, and spray with oil.

3. Cut potatoes in 1/4 – 1/2″ slices, and use a cookie cutter to cut out shamrock shapes (see image below).

4. Place potatoes in a microwave safe bowl, and microwave on high (checking and stirring every 2 minutes). Microwave until slightly tender.

5. Mix oil, salt, pepper, and paprika; toss with potatoes.

6. Spread marinated potatoes on baking sheet.

7. Roast potatoes until golden brown and tender — 5-15 minutes depending on the thickness. Season with additional salt if you like.
