Key Lime Cupcake
The below recipe incorporates the St. Patrick’s day color green. It makes a yummy dessert and hides a beautiful design inside. Visit our page on the color green to learn more about the symbolism and meaning of the color green for St. Patrick’s Day.
Ingredients:
1 package white cake mix
Water (according to pkg. directions but reduced by 1/2 cup)
Oil (according to package directions)
Egg whites (according to pkg. directions)
1 container Yoplait Key Lime yogurt
1 t. lime peel
1 t. lime extract*
green food coloring
1 can vanilla frosting
*You can substitute 1/4 cup lime juice, but make sure to reduce water by this amount.
Directions:
1. Follow package directions for preparing cake.
2. Add yogurt, lime peel and lime extract.
3. Divide batter into three equal parts. Use about 4 drops of green food coloring to make one of the parts a light green color, and about 24 drops to make another one of the parts a dark green color (see image 1).
4. Place each part of frosting in a ziploc bag. Press out air, seal, and cut a 1/4″ corner off the bottom of the bag through which to pipe batter.
5. Line cupcake pan, and pipe white batter into the liner (see image 2). Next, pipe the dark green color deep into the middle of the white batter (see image 3). Lastly, pipe the light green color deep into the middle of the dark green.
6. Cook according to cake package directions, cool and frost.
