Shepherd’s Pie

The below recipe incorporates the St. Patrick’s day color green and it’s name can help us to recall St. Patricks days of slavery when he worked as a shepherd in Ireland. Shepherds PieIngredients (per Sandwich):

6 potatoes
1/2 cup butter, divided
1 onion
2 lbs. ground beef
1/2 cup beef broth
1/2 T. flour
1 cup frozen peas
1 cup frozen carrots
1 cup frozen corn
1/2 t. salt
1/2 t. pepper
1 t. worcestershire sauce
2 T. chopped fresh parsley leaves

Directions:

1. Peel and quarter potatoes. Boil in salted water until tender (about 20 – 30 minutes).

2. Melt 1/4 cup of butter in frying pan, and saute onions until slightly tender.

3. Add ground beef to onions and cook until brown.

4. Mix flour into beef broth and pour over onion and beef mixture.

5. Add remaining ingredients (except parsley leaves), and cook over medium heat for about 10 minutes.

6. Drain and mash potatoes with remaining 1/4 cup butter. Add milk if necessary to thin.

7. Place beef mixture in a baking dish. Top with potatoes and broil for 5-10 minutes (until potatoes are slightly golden).

8. Sprinkle fresh parsley on top and serve.
