Mini Corned Beef Hash Pizzas
The below recipe incorporates the St. Patrick’s day symbol of the shamrock, as well as the traditional American Irish food of corned beef hash. Visit our St. Patrick’s Day Symbols page to learn more about the symbolism and meaning of shamrocks for St. Patrick’s Day.
This recipe makes a unique and delicious pizza. It is a great way to use up leftovers from a corned beef dinner, or you can simply buy a few thick slices of corned beef from your deli and use frozen chopped potatoes (Southern style).
Ingredients:
2 T. butter
1 cup corned beef, cubed
1 cup cooked potatoes, cubed
1/4 t. pepper
1/8 t. salt
1/4 cup chopped fresh parsley (optional)
1 pkg. English muffins
1 pkg. sliced mozzarella (12 slices)
1 cup Thousand Island dressing
1 pkg. shredded mozzarella (2 cups)
2 green peppers
Directions:
1. Melt butter in skillet over medium heat.
2. Add corned beef and potatoes to the skillet to warm them. If you are using frozen potatoes, microwave them first until they are soft.
3. Remove from heat and add pepper, salt and parsley.
4. Half the English muffins and put face side up on a cookie sheet. Place a mozzarella slice on each muffin.
5. Spread Thousand Island dressing over the sliced mozzarella, and top with corned beef hash mixture.
6. Sprinkle shredded mozzarella over mixture, and top with a slice of green pepper.
7. Cook at 350 degrees for approximately 10 minutes.
