Strawberries and Cream Crepes Recipe
Crepes are an extra special treat at my house, and what better time to make them than Valentine’s Day? This recipe includes my all time favorite crepe filling and sauce. I also like that it incorporates the Valentine’s day colors of red and white. You can visit our Valentine’s Day Symbols page to learn more about the symbolism and meaning of red and white.
Crepe Ingredients:
3/4 cup flour
3 eggs
1/2 cup milk
1/2 cup water
3 T butter, melted
1/2 t. salt
Cream Filling Ingredients:
1 cup heavy cream, whipped
1 (8 oz.) pkg cream cheese, softened (about 1 cup)
1 cup powdered sugar
1 T. lemon juice
1 t. vanilla
Strawberry Syrup Ingredients:
1 cup berry juice (100% juice)
2/3 cup sugar
2 t. cornstarch
3 cups fresh strawberries, sliced
Canned whipped cream (for topping)
Directions:
1. Mix crepe ingredients with an electric blender until smooth.
2. Heat 1/2 T. of butter in a skillet and pour about 2 T. of batter into skillet. Tip and rotate the pan to spread the batter. Flip the crepe when the edges begin to brown. Cook until the other side is brown and remove from skillet. Repeat to make about 10 crepes.
3. Whip the heavy cream with an electric mixer until firm. In a separate bowl beat together the remaining filling ingredients, and then fold in the whipped cream.
4. To make the strawberry syrup, place the juice, sugar and cornstarch in a pan. Bring to a rolling boil, stirring often. Remove from heat and allow to cool slightly. Add strawberries.
5. Fill each crepe with cream filling and top with strawberry syrup. Garnish with canned whipped cream. Oh so good!!!
