Potato and Sausage Soup Recipe

This is a wonderful soup for a cold February day. I like that you can incorporate the symbol of the heart as a garnish, as well as the Valentine’s Day color of white. Potato and Sausage SoupIngredients:

1 lb. sweet turkey sausage
1 1/2 t. crushed red peppers
1 large onion, diced
4 T. bacon pieces
2 t. garlic, crushed
8 cups water
5 cubes chicken bouillon
1 cup heavy cream
1 lb. russet potatoes (about 5 large potatoes), sliced (reserve some slices for garnish)

Directions:

1. Cook sausage and red pepper in a large pot over medium heat. Drain fat and refrigerate while you prepare other ingredients.

2. In the same pot, cook bacon, onions and garlic over medium heat until onions are soft (about 10 minutes).

3. Add water and chicken bouillon to the onion mixture, and cook until boiling.

4. Reduce heat slightly, add potatoes and cook until soft (about 30 minutes).

5. FOR GARNISH: Use a cookie cutter on reserved slices of potato to form hearts. Fry in butter and oil over medium heat until crispy. Season with salt.

6. Add cream and sausage and cook until heated through.

7. Garnish with heart fried potatoes.
