Crushed Candy Cane Cookie Recipe

Ingredients:
1 (8 oz) package cream cheese, softened
1/4 cup butter, softened
1 egg
1/4 t. vanilla extract
1 box white cake mix
1 (6 oz.) package candy canes, crushed
1 (28 piece) package Andes thin mints (optional)
Directions:
1. Preheat oven to 375 degrees.
2. Beat together cream cheese and butter with an electric mixer until light and fluffy.
3. Beat in egg and vanilla.
4. Add cake mix in batches (about 1/3 at a time). If mixture is too heavy for electric mixer, use hands to “knead” in the cake mix.
5. Crush candy cane pieces in a ziploc bag, then stir into mix.
6. Cover and chill for 30 minutes.
7. Drop batter in lumps (the mixture will be a bit sticky) 2” apart on lightly greased cookie sheet.
8. Bake approximately 7-9 minutes. Cool slightly before removing from baking sheet.
9. Optional: Melt thin mints in microwave (for 30 seconds). Stir every 15 seconds until melted. Drizzle over slightly cooled cookies for an extra minty taste.
