Tomato Zucchini Bake Recipe

Ingredients:

4 tablespoons butter
1 onion, chopped
3 zucchini, sliced 1/4″ thick
3 garlic cloves, minced
3 tomatoes, peeled and cut
1 1/3 cups monterey jack cheese, shredded (divided)
1 cup bread crumbs, dry (divided)
2 teaspoons basil
1/4 teaspoon salt
1/4 teaspoon pepper

Directions:

1. Melt butter in frying pan. Saute onion and garlic until tender.
2. Add zucchini and saute a few minutes.
3. Add tomato, 1 cup of cheese and 3/4 cup bread crumbs.
4. Stir in basil, salt and pepper.
5. Pour into casserole dish and top with remaining cheese and bread crumbs.
6. Bake uncovered at 375 degrees for 30 minutes.
